Orange Blossom Chia Pudding

Yeah, yeah, its chia pudding, but I’m not trying to win Masterchef here, I’m just trying to give you healthy stuff that tastes good. What can I say, you get the seed/liquid balance right on these guys and you’re home and hosed. Then you can just play around with flavours and toppings. My obsession with orange blossom water is real this week having chucked it into a cake, waffles and now this. Haven’t tried it? You’re missing out, so go grab a bottle and make this.

For the pudding…

  • 1 cup coconut milk
  • 3 tablespoons chia seeds
  • 1 1/2 tablespoons honey
  • 2 teaspoons orange blossom water

For the caramelised oranges…

  • 1 orange
  • 1 tablespoon honey
  • 2 teaspoons orange blossom water

Mix all ingredients for the pudding together in a bowl and mix well (or in a jar and shake well. Place in fridge. Give another shake or stir after 30 minutes if possible. Leave for a few hours or overnight).

When ready to eat, slice peel and all white pith from the orange.

Slice into 1/2cm slices.

Heat the honey in a warm pan. Add the orange slices and simmer to caramelise. Add the orange blossom water and simmer until syrupy. It should only take a few minutes.

Serve pudding topped with the orange slices and pistachios.

Serves 2.
